How to Make a Cutting Board (Beginner Guide)

How to make a cutting board from glued hardwood strips, with a no-clamp one-board option, honest end-grain notes, food-safe oiling and care.

Time and cost are bands, not quotes. What you actually pay depends on your timber prices, what your yard stocks, and which tools you already own.

What you're making

A hardwood chopping board, made by gluing several narrow strips together edge to edge into one wide panel. It is the first project here that produces something a household will use every day, and the first with a finish you have to think about rather than just apply.

It is third in the beginner project order on the projects hub because it builds directly on the clamping you learned making a simple wooden box. The difference is that a box hides an imperfect joint in a corner. A cutting board hides nothing: every glue line sits in the middle of the face, in the light.

Cost is driven almost entirely by the hardwood, which varies enormously by species and by country. Maple and beech are usually the cheapest good options; walnut and cherry cost more. Home centres sell hardwood in narrow craft or hobby sizes, which is what makes this possible without a table saw. If you own no clamps, a pair of bar clamps is the real cost of the glued version, and the one-board alternative below avoids it.

Cut list

Hardwood sold as 1x2 or 1x3 is nominal, like softwood. Actual sizes are around 19 x 38 mm and 19 x 64 mm (3/4 in by 1 1/2 in and 3/4 in by 3 1/2 in), and both names and stock sizes differ by country. Measure what you buy.

Five 1x3 strips give a board around 320 mm wide. Mixing 1x2 and 1x3 strips, or alternating a light and a dark species, gives a stripe pattern for no extra work.

Before you start

Clear a flat surface for the glue-up. A panel dries in the shape you clamp it into, so a twisted table makes a twisted board.

Safety for this build:

Stop and ask for help if you cannot establish what a piece of timber is or what has been done to it. This is a food surface. Reclaimed decking, pallet wood, old shelving and anything with a coating can carry treatments that should never touch food, and you cannot tell by looking. If a board's history is unknown, use it for a project that does not touch food instead. End grain or edge grain

The board in this guide is an edge-grain board: the strips lie flat and you cut on their long-grain faces. An end-grain board is the checkerboard kind, made by gluing up a panel, crosscutting it into blocks, then standing those blocks on end and gluing them again. End-grain boards are commonly described as showing knife marks less, because the fibres stand up and can close back around the blade. Take that as the usual claim rather than something you can measure at home. What is not in dispute is the cost of getting there: twice the glue-ups, far more accurate cuts, more clamps, more careful flattening, and more movement with changes in moisture. Make an edge-grain board first. The second one can be ambitious.

Building the board

Step 1: Check every strip before you cut

Sight along each strip and reject anything bowed, twisted, cracked at the end or noticeably damp. A strip that will not lie flat on the bench will not lie flat in a clamp either. It just fights you and leaves a gap.

Step 2: Cut all strips to length together

Mark one strip, cut it, then use that piece to mark all the others. Matching lengths matter more than hitting an exact number, and you will trim both ends of the finished panel square afterwards anyway.

Step 3: Lay out the strips and mark them

Arrange the strips face up in the order you like, then draw one large pencil triangle across the whole face. That triangle is your reassembly map. Once glue is on and everything is slippery and identical-looking, it tells you which strip goes where and which face is up.

Push the strips tightly together and look along each joint against the light. A joint that shows a gap dry will show that gap forever.

Step 4: Dry-fit the clamps

Close the clamps on the dry panel. Check the strips stay flat rather than popping up into a ridge, and check the clamps reach. Then open them and leave them ready. Glue does not wait while you look for a fourth clamp.

Step 5: Glue up

Use a wood glue whose label states it is water resistant, often described as Type II or Type III. A cutting board gets washed, and an ordinary interior glue is the wrong choice.

Spread a thin, even film along one edge of each joint and rub the strips together to spread it. Bring the clamps on from alternating sides, above and below the panel, which balances the pressure and stops the panel bowing. Tighten in stages, working across the panel.

Squeeze-out will appear along every joint. Wipe it off with a damp cloth while it is wet, then check again a few minutes later. Dried glue seals the fibres around it, and a sealed patch will not take oil, so it shows up later as a pale streak down your board. Leave the panel clamped for as long as the glue label says.

Step 6: Flatten, trim and sand

Out of the clamps, the joints will not be perfectly level. Sand the whole face flat, starting at 80 grit and working the high spots down until the surface reads as one plane rather than a set of strips, then move up through 120, 180 and 220. Work with the grain. A sanding block and assorted sandpaper matters here; fingers alone dish the soft areas and leave the glue lines standing proud.

Trim both ends of the panel square, then soften every edge and corner. A board with sharp arrises chips at the edges and is unpleasant to pick up wet, so round them over deliberately with 120 grit and refine with 180.

Last, raise the grain: wipe the board with a damp cloth, let it dry fully, and sand very lightly with 220. Water makes crushed fibres stand up, and doing it now means the board does not turn rough the first time it is washed.

Where beginners go wrong

Gluing strips that were not flat to begin with. Clamps can close a small gap, but the tension stays in the panel and that joint is the weak point. Fix the strip or leave it out.

Not enough clamps, or all from one side. Both give you a bowed panel. Alternate them above and below.

Leaving squeeze-out to dry. Sanding removes the bead on the surface, not the glue that soaked into the grain. The sealed area cannot absorb oil, so it stays pale while the wood around it darkens.

Sanding too fine, too early. The job at 80 grit is to make the surface flat. Jump to 180 before it is flat and you get a smooth wavy board.

Using a finish that is not meant for food contact. Plenty of excellent wood finishes are formulated for furniture, not for a surface you cut food on. Read the container.

Finishing it

Use food-grade mineral oil, then a board wax made from beeswax and mineral oil once the oil has soaked in. Both are sold specifically for chopping boards and butcher block, and together they are the standard beginner answer: simple to apply, easy to renew, and no film that can chip into food. Food-grade mineral oil and board wax is usually stocked side by side for exactly this job.

Flood the surface with oil, let it soak in, add more anywhere that drinks it straight away, then wipe off everything not absorbed. Do all faces and edges, not just the top, so the board takes on and loses moisture evenly. Then apply a thin coat of wax and buff it.

Two honest cautions. Follow the directions on the container you actually bought, including anything about drying and re-coating, rather than a number from a guide: products differ and the maker's label is the instruction that counts. And avoid cooking oils such as olive or vegetable oil, which can turn rancid in the wood.

If you use a film-forming finish instead, it must be one the maker states is intended for food-contact surfaces, and it must be given the full hardening time the label specifies before the board meets food. That time varies by product and conditions, so read it rather than guessing. Rags soaked with an oil finish can heat up on their own and catch fire, so spread them flat outdoors to dry or dispose of them as the maker directs. Looking after it

Wash by hand in warm soapy water, rinse, dry immediately with a towel, then stand the board on edge so air reaches both faces. Never put it in the dishwasher and never leave it soaking in the sink. Both mean prolonged wet, which swells the wood, and the drying that follows shrinks it unevenly. That is what cracks boards and opens glue lines.

Re-oil when the surface looks dry and pale. A new board wants it often; after that it depends on use and washing, so go by the wood rather than a calendar.

Make it yours

Add a hanging hole. A hole drilled in one corner lets the board hang and dry, which is better for it than lying flat.

Alternate species. Light maple with dark walnut strips costs a little more and looks like a much harder project than it is.

Make it small. A cheese board from three strips uses less wood, needs fewer clamps, and is a good way to test a species first.

Common questions

What wood is suitable for a cutting board?

Close-grained hardwoods are the usual choice: hard maple, beech, cherry and walnut. They resist denting and their surfaces clean up easily. Softwoods like pine dent under a knife and soak up more moisture. Red oak has very open pores and some makers avoid it for boards for that reason. Whatever you pick, use timber whose history you know and that has never been treated or finished.

Can I make a cutting board without clamps?

Yes. Skip the glue-up entirely and make the board from one wide hardwood board, or from a ready-glued hardwood panel sold at most home centres. Cut it to length, soften the edges, sand it and oil it. A single wide board is more likely to cup as it takes on and loses moisture than a glued-up board, so keep it oiled and dry it evenly on both faces.

What finish is food safe for a cutting board?

The standard beginner choice is food-grade mineral oil, followed by a board wax made from beeswax and mineral oil. Both are sold specifically for chopping boards and butcher block. Why can a cutting board never go in the dishwasher?

A dishwasher combines prolonged soaking with heat. Wood swells when it absorbs water and shrinks as it dries, and doing that quickly and unevenly makes boards cup, crack and open at the glue lines. Soaking the board in the sink does the same thing more slowly. Wash by hand, rinse, dry the board straight away, and stand it on edge so both faces dry at the same rate.

How often should I re-oil the board?

When it starts to look dry and pale rather than on a schedule, because it depends on how often you use it, how you wash it and how dry your kitchen air is. New boards drink oil and want it often at first. Apply a generous coat, let it soak in, then wipe the surplus off. A wax coat over the oil afterwards slows moisture moving in and out.
